Raised on wooden piles (“bouchots”) driven into the sea, this traditional method guarantees natural growth, protected from predators and with a diet rich in phytoplankton, giving these mussels an incomparable flavor and texture.

The Bouchot mussel from Normandy has Protected Geographical Indication (PGI) status, a recognition that certifies the authenticity of its origin and compliance with rigorous quality standards. These are medium-sized mussels with fine, flavorful, iodine-rich meat of excellent consistency.

In the waters off Mont Saint-Michel Bay, the only bouchot mussels in the world with Protected Designation of Origin (PDO) status are cultivated. This designation guarantees a unique, internationally renowned product, recognized for its golden flesh, meaty texture, and distinctive flavor, influenced by the rich mineral content of an area declared a UNESCO World Heritage Site. They are, without a doubt, the ultimate benchmark of quality among bouchot mussels.

In the cold waters of the North Atlantic, we cultivate mussels using ropes, a different but equally natural method that yields meatier mussels with a mild and balanced flavor.
